Broccoli Stuffed Peppers

This quick dish makes a super starter or you can use it as a side vegetable with a main course.

You will need:

You will need one pepper and a fist-full of broccoli heads per person.

And, this is what you do!

Cut the broccoli heads into individiual pieces a little bigger than marbles. Put them in some lightly salted water and boil for ten minutes.

Meanwhile, cut the top off the peppers. Do this by cutting right across the top so that you are left with the top as a disk (with the stalk left in place) and the body as a sort of pot.

Scoop out the seeds from the peppers and fill them up with the cooked broccoli.

Put the tops back on the peppers and place them in a preheated oven, at gas mark 5 for thirty minutes.

To Serve

Before serving. allow some butter to melt over the broccoli and place a walnet half on the top of it. Replace the top of the pepper and serve.
