Nutty Potatoes

A tasty vegan snack or the basis for a main course when served with other vegetables.

You will need:

Per person, you need one large potato and 20gms of mixed nuts.

And, this is what you do!

Clean the potatoes, prick their skins and place them in a preheated oven at gas mark 8 or 230C for one and a half hours.

Meanwhile, crush the nuts.

When the potatoes are cooked, take them from the oven, cut them in half and scoop out and mash the contents.

Add a little vegan margarine or butter if you prefer and add salt and pepper to taste. Then mix in the crushed nuts.

Return the mixture into the potato skins and bake for another 30 minutes by which time the top of the mashed potato should have started to brown.

To Serve

Remove from the oven and serve HOT!
